Yield:
1 small loaf of cornbread (6 slices)
Ingredients:
½ egg
125ml buttermilk
25g melted butter
¼ tsp salt
1 tbsp sugar
½ tsp baking agent
½ tsp baking soda
60g cornflour
75g regular flour (type 405)
Preparation:
1) Cornbread isn’t really bread, in my opinion. I would rather describe it as a mixture of bread and cake. It can be eaten by itself, maybe with some toppings, or is otherwise typically used on thanksgiving for the stuffing of the turkey.
2) First, mix all the dry ingredients in a bowl: the name-giving cornflour of course and also regular flour. Then some sugar, salt and some baking agent as well as baking soda, to help the bread rise.
3) Now beat half an egg into another bowl, add the buttermilk and melted butter. Stir it together and pour it into the flour-mixture.
4) The dough is too runny to knead it with your hands, like you would with proper bread. So just use a kitchen mixer to stir all the ingredients into a cohesive dough and then transfer it into a previously greased baking pan.
5) The cornbread needs about 20 minutes in a preheated oven at 200 degrees Celcius or 392 degrees Fahrenheit.
